Citrus fruits, like oranges, provide vitamin C along with great taste. Choosing the fruit over the juice gives a fiber boost too.

Simplify:

Star-shaped jicama pieces add a festive look to this dazzling salad, but it'll be just as tasty with simple jicama cubes or sticks.

Variation:

Toss chopped walnuts or pecans into this salad along with the dried cranberries for Nutty Mixed Greens with Fruit.

cup orange juice

cup honey

teaspoon ground cinnamon

medium jicama, cut into 1/4-inch slices

oranges, peeled, sliced

kiwifruit, peeled, sliced

cups torn mixed salad greens

cup sweetened dried cranberries

To make dressing, in small bowl, mix orange juice, honey and cinnamon until well blended.

Cut jicama into star shapes using small star-shaped cookie cutter. In large serving bowl, place jicama stars, oranges and kiwifruit. Add salad greens and dressing; toss to mix. Sprinkle with cranberries.
