Pico de Gallo
Ingredients
· 1 pint grape tomatoes, chopped*
· 1 green bell pepper, chopped
· 1 red bell pepper, chopped
· 1 avocado, peeled and chopped
· 1/2 medium-size red onion,
chopped
· 1/2 cup chopped fresh cilantro
· 1 garlic clove, pressed
· 3/4 teaspoon salt
· 1/2 teaspoon ground cumin
· 1/2 teaspoon grated lime rind
· 1/4 cup fresh lime juice
Preparation
Stir together all ingredients; cover and chill 1 hour.
Avocado is a good source of healthy fat. Serve with low fat or baked tortilla
chips.
*2 large tomatoes, chopped, may be substituted
