Ingredients

  • nonstick vegetable spray
  • 2 egg whites
  • 1 egg
  • 1/4 cup mushrooms, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup yellow bell pepper, chopped
  • 1/4 cup zucchini
  • 1/4 cup cherry tomatoes
  • 1 Tblsp chopped black olives
  • 2 Tblsp Feta cheese
  • 2 basil leaves, for garnish

Directions

  1. Spray pan with nonstick spray and cook mushrooms, onions, bell peppers, zucchini and tomatoes over medium-heat until tender.
  2. Add egg mixture and stir until eggs are cooked.
  3. Top with black olives, Feta cheese and basil.
