Time: Prep - 5 minutes Cook - 30 minutes Yield - 1 x 6 servings

Ingredients

  • 1/2 cup rice vinegar
  • 3 Tbls sugar substitute
  • 3 cups cucumber, unpeeled, sliced 1/4-inch thick
  • 2 cups tomato, chopped
  • 1/2 cup red onion. chopped
  • salt and pepper to taste

Directions

  1. Combine vinegar and sugar substitute.
  2. Add cucumbers, tomato and onion. Season to taste with salt and pepper; mix well.
  3. Refrigerate covered, at least 30 minutes before serving.
